Lea Russell is a clinical nutritionist who will be speaking with the Knoxville community all about food sensitivities on August 13th. We met up with her and asked her a couple questions.
Dr. Andy: Lea, what are food sensitivities?
Lea: To simplify, a food sensitivity is a food that your body views as an enemy invader. Food sensitivities occur when a food you eat causes an immune system reaction with the release of mediators leading to inflammation in the body. Determining and removing foods that cause inflammation can be an important part of breaking the cycle of chronic inflammation and relief of symptoms.
Dr. Andy: How do I know if I have food sensitivities?
Lea: Millions of Americans suffer from food sensitivities. Conditions such as IBS, acid reflux, migraine and other headaches, difficulty losing weight and obesity, fibromyalgia, chronic fatigue, skin eruptions, brain fog , ADD, Asthma and many other health problems are often directly related to the foods we eat. Even healthy foods can provoke symptoms in sensitive individuals. Food Sensitivities are also one of the most clinically challenging as these are often delayed for hours and up to 4 days. This delayed reaction makes it very difficult for most people to identify which foods are triggering their symptoms.
